If you love pineapple and coconut, you will be obsessed with this recipe! These piña colada bites are so refreshing on a hot summer day, and will be one of your staple summer snacks!
I love keeping these in the freezer for a quick sweet snack or healthy dessert. I love to snack throughout the day, and have found that when I have healthy snacks prepared it helps me stay on track!
For this recipe, I used half of a pineapple, but if you want to use the whole pineapple then you can adjust the measurements of yogurt and coconut!


Frozen Piña Colada Bites
Ingredients
- 1/2 of a ripe pineapple
- 1 cup vanilla greek yogurt
- 1 cup shredded coconut
Instructions
- Cut your pineapple into bitesized pieces. Arrange on a plate and freeze for about an hour, it helps the yogurt stick better!
- Place the vanilla greek yogurt in one bowl, and the shredded coconut in a separate bowl.
- Use a fork to pick up a piece of pineapple, and coat it in the greek yogurt and then in the shredded coconut.
- Place on a plate or baking sheet lined with parchment paper, and repeat until all of the pineapple is coated.
- Freeze on the tray for 2-3 hours, then transfer to an airtight container. Enjoy!
