With fall just around the corner, I’m wanting to start cooking with all of the fall flavors!
I know that we have a few more weeks of summer, so this salad is the perfect combination of a light, fresh salad with some fall flavors.
I have been loving making big salads for lunch lately, they are so refreshing and I feel so energized after making them! Check out my blog post on how I plan and make healthy lunches.
This salad has:
- Mixed greens
- Sweet potato
- Green apple
- Red onion
- Walnuts
- Grilled chicken
- Goat cheese
Some other delicious toppings that you could add are roasted sunflower seeds, dried cranberries, or candied nuts!
For the dressing I made one of my favorites, a sweet balsamic dressing that is much lower in sugar than regular balsamic glaze! Check it out in the recipe below…


Autumn Sweet Potato and Green Apple Salad
Ingredients
For the salad
- mixed greens
- cubed sweet potato
- sliced green apple
- handful of walnuts
- sliced red onion
- crumbled goat cheese
For the dressing
- 1/4 cup balsamic vinegar
- 1 tsp sweetener (can use stevia, monkfruit, honey, maple syrup)
- pinch of salt
- dash of cinnamon
Instructions
- Place mixed greens in a bowl, and top with all salad ingredients.
- Mix together salad dressing ingredients and drizzle on top of salad. Enjoy!
