These zucchini fries are so crispy and delicious! They are a great side for dinner, or an easy healthy snack. They are a great way to get an extra serving of veggies in… even kids will love them!
Zucchini fries are a low carb, low calorie alternative to french fries, so you can eat a bunch and still look and feel your best! Try them out at your next meal with your favorite dipping sauce!


Zucchini Fries
Ingredients
- 4 zucchini
- 1/2 cup oats
- 1 tsp garlic powder
- 1 tsp salt
- 1/4 cup parmesan cheese
- 1 egg
- olive oil spray
Instructions
- Wash your zucchini, and cut both ends off. Cut each zucchini in half, then cut each half into 4 pieces. You should have about 8 wedges per zucchini.
- Blend oats into a fine flour. Add to a bowl, and mix in garlic powder, salt, and parmesan cheese.
- In a separate bowl, crack one egg and whisk it with a fork.
- Preheat your air fryer to 400°F.
- Coat each zucchini wedge in the egg, shake off the excess, then coat in the flour mixture. Repeat until all of the zucchini is coated.
- Arrange in the air fryer in a single layer and spray well with olive oil spray. Air fry for about 12 minutes, until zucchini fries are golden and crispy. Enjoy!
