Crispy Air-Fried Zucchini Fries

These zucchini fries are so crispy and delicious! They are a great side for dinner, or an easy healthy snack. They are a great way to get an extra serving of veggies in… even kids will love them!

Zucchini fries are a low carb, low calorie alternative to french fries, so you can eat a bunch and still look and feel your best! Try them out at your next meal with your favorite dipping sauce!

Zucchini Fries

Servings: 2 servings

Ingredients

  • 4 zucchini
  • 1/2 cup oats
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 cup parmesan cheese
  • 1 egg
  • olive oil spray

Instructions

  • Wash your zucchini, and cut both ends off. Cut each zucchini in half, then cut each half into 4 pieces. You should have about 8 wedges per zucchini.
  • Blend oats into a fine flour. Add to a bowl, and mix in garlic powder, salt, and parmesan cheese.
  • In a separate bowl, crack one egg and whisk it with a fork.
  • Preheat your air fryer to 400°F.
  • Coat each zucchini wedge in the egg, shake off the excess, then coat in the flour mixture. Repeat until all of the zucchini is coated.
  • Arrange in the air fryer in a single layer and spray well with olive oil spray. Air fry for about 12 minutes, until zucchini fries are golden and crispy. Enjoy!

These muffins are the perfect healthy treat to make this fall! They are so easy to make and are sooo delicious 🙌🙌

I used my favorite @promix Madagascar Vanilla whey protein powder in this recipe! It’s my favorite for baking because its made with natural ingredients and adds the perfect sweet vanilla taste 🍦

Ingredients:
- 2 cups oats
- 1/2 cup @promix vanilla whey protein powder 
- 1 tsp baking soda
- 1/2 tsp baking powder 
- 1/2 tsp salt 
- 1 tsp pumpkin pie spice or cinnamon 
- 1 1/2 cups pumpkin purée 
- 2 eggs
- 1/4 cup sweetener of choice (I used monk fruit, you can use honey, maple syrup etc)
- 1/3 cup milk
- 2 tsp vanilla extract 

How to:
- Blend oats into oat flour 
- Add all dry ingredients to a bowl and mix together
- In a second bowl whisk together wet ingredients 
- Fold the dry ingredients into the wet ingredients 
- Divide into a greased or lined muffin tin 
- Bake at 350F for 18-20 mins 
- Let cook and enjoy! 

Makes 12 muffins: 123 calories, 12g protein, 14g carb, 3g fat each
