You will love how easy and delicious this banana bread recipe is! Whenever I have overripe bananas I make banana bread – it is one of my favorite treats! This banana bread is low in refined sugar, gluten free, and super easy to make!
The key to making this banana bread is to use overripe bananas, the browner the better! The more overripe the banana is, the sweeter it makes the banana bread taste. Overripe bananas also contain more antioxidants and fiber than yellow bananas, so they will keep you satisfied for longer, and boost your health!
I like to use gluten-free oats in my baking recipes. I am not gluten-free, but I buy organic, gluten-free oats in bulk because they are grown, harvested and manufactured in a more pure environment (less pesticides and sprays). For this recipe you can use any kind of oats – rolled, old-fashioned, quick oats etc. because you blend them into oat flour which gives the banana bread a light, fluffy texture.
So why do I use oat flour in this recipe instead of regular flour? Oat flour is much higher in whole grain dietary fiber, antioxidants, minerals and vitamins compared to white flour. The fiber in oats helps increase the amount of good bacteria in the gut to keep your digestive tract healthy. Give oat flour a try in this banana bread recipe!
