These Cinnamon Sugar Munchkins are SO good! I made these for the first time, and could not believe how good they were. I was inspired by the Dunkin Donut munchkins, and wanted to find a healthier way to enjoy them as a snack!
They are high in fiber and protein, so are the perfect sweet snack to satisfy your cravings and help you feel fuller. They are so healthy that you could even eat these for breakfast!
You can also prep these Cinnamon Sugar Munchkins ahead of time to snack on throughout the week. I find that having healthy snacks prepped helps me stay on track and eat healthier overall.
I air fried my munchkins, which gives them a crispy, golden brown layer, without the added oil of deep frying! If you don’t have an air frier, you can try baking these at 350F for a few minutes until golden brown.

Healthy Cinnamon Sugar Munchkins
Ingredients
- 1 cup oats
- 1 serving vanilla protein powder
- 1 tsp vanilla
- 1 tsp cinnamon
- pinch of salt
- 1 tbsp sweetener
- splash of almond milk
Instructions
- Blend oats into oat flour. In a bowl mix together oats, protein powder, vanilla, cinnamon, salt and sweetener.
- Add a splash of milk at a time until a very thick dough forms. In a separate bowl, mix together a little more sweetener and cinnamon to make cinnamon sugar. Roll dough into balls, and roll each ball in cinnamon sugar.
- Air fry at 350F for about 3 mins until golden brown.
- Let munchkins cool for a few minutes, then toss again in cinnamon sugar and enjoy!
