This Instant Chia Pudding is my go to breakfast! I have it almost every morning because it takes less than 5 minutes to make, has over 50 grams of protein, and is SO delicious!

WHY IS CHIA PUDDING GOOD FOR YOU?
Chia pudding is one of my favorite breakfasts to make because it is so good for you! Chia seeds are high in fiber, antioxidants and healthy fats. When you add them to liquid, they magically gel up and create a pudding-like texture! I like to add greek yogurt and protein powder to my chia pudding to add a boost of protein to keep me feeling satisfied throughout the morning.
WHY I EAT A HIGH PROTEIN BREAKFAST
I prioritize protein at every meal, but especially at breakfast! I workout 6 mornings a week, either lifting weights, or a cardio workout such as running. I always fuel my body afterwards with a balanced breakfast and make sure to eat a lot of protein so my body can recover! I have also found that eating a high protein breakfast keeps me full all morning until lunch.
TOPPING IDEAS
I also love this recipe because you can change up the toppings depending on what you feel like having that day.
Here are a few of my favorite topping ideas:
- Blueberry Muffin: Add blueberries, almond butter and cinnamon on top
- Fall Inspired: Stir in diced apple and add walnuts and cinnamon on top
- PB & J: Add sliced strawberries and a drizzle of natural peanut butter
- Chocolate: Stir a tablespoon of cocoa powder into the chia pudding
- Coconut Mango: Add sliced mango and coconut flakes on top
MY FAVORITE PROTEIN POWDER

High Protein Instant Chia Pudding
Ingredients
- 2 tbsp chia seeds
- 1/4 cup hot water (very hot but not quite boiling)
- 3/4 cup non-fat plain greek yogurt
- 1 serving vanilla protein powder
Toppings I added
- 1/2 cup frozen wild blueberries
- 1 tbsp natural peanut butter
- 1 tsp honey
- 1/4 tsp cinnamon
Instructions
- Add chia seeds to a bowl. Add hot water and stir for about 30 seconds until the chia seeds absorb the water and gel up.
- Stir in greek yogurt and protein powder until well combined.
- Add your choice of toppings and enjoy!
