This is a great recipe to meal prep for an easy weeknight dinner! This is one of my go-to meals because you can swap the toppings depending on what veggies you have in your fridge. The secret to this meal is in the sauce, which you make in the blender in less than 5 minutes! I hope you enjoy this recipe 🙂


Korean Beef Bowl
Ingredients
For the ground beef
- 4 oz ground beef
- 1 tsp minced garlic
- 2 tbsp soy sauce
- 1 sliced green onion
For the bowl
- 1/2 cup cooked white rice
- sliced cucumber
- shredded carrot
- pickled onions
- roasted peppers
For the sauce
- 4 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp peanut butter
- 1 tsp minced garlic
- 1 tsp minced ginger
Instructions
Cook the ground beef
- Spray a skillet with olive oil spray and add ground beef. Once it is about half way cooked, add the soy sauce, minced garlic, and sliced green onion. Stir together and cook until ground beef is no longer pink, and remove from heat.
Make the peanut sauce
- Add all ingredients to a blender, and blend for about 30 seconds or until smooth and creamy!
Assemble the bowl
- To a bowl, add a base of white rice, then top with ground beef and veggies. Drizzle peanut sauce on top! You can also garnish the bowl with extra green onions, lime wedges, or chopped peanuts!
