This Mediterranean Chicken Bowl is the perfect healthy lunch to meal prep for work or school! It is filled with colorful veggies, grilled chicken, brown rice, and a delicious yogurt dill dressing that is full of flavor.

Perfect for meal prep
I love meal prepping a few lunches at the beginning of the week for quick, easy lunches. It saves me so much time and helps me eat healthier! You can also prep a batch of chicken and a batch of rice and add everything together the day of – it only takes five minutes to throw together!
If you are prepping this ahead of time, I suggest keeping the yogurt dill dressing on the side and adding it right before eating so the veggies don’t get soggy. This meal stays good in the fridge for up to three days!

- Brown rice: A great source of whole-grain carbs and fiber to give you energy throughout the day.
- Chicken: High in protein to keep you feeling full.
- Veggies: I love adding spinach or arugula, cherry tomatoes and cucumber, but you can add any veggies that you like!
- Pickled red onions: These add so much flavor and I love making my own homemade!
You can also add any toppings that you like! Here are some of my favorites:
- Crumbled feta
- Hummus
- Tzatziki
TOOLS THAT I USE TO MAKE COOKING THIS A BREEZE
When it comes to meal prep, I want it to be quick and easy with minimal clean up. Here are the tools that I used to make the Mediterranean Chicken Bowls.
- Air fryer: I have found that air frying chicken breast is the EASIEST way to get perfectly cooked chicken every time. Golden on the outside, juicy in the middle, and all you have to do is press two buttons. This is my favorite air fryer!
- Rice cooker: I don’t know what I did before I got a rice cooker!! You get perfectly cooked rice every single time, with no water boiling all over your stove. This rice cooker is a bit of an investment but is so worth it!
- Knife set: If you want a great quality, affordable knife set look no further! This knife set is made from high-quality stainless steel, and comes with a storage block that looks great on your counter with a built in knife sharpener.

Mediterranean Chicken Bowl
Ingredients
- 1/4 cup brown rice
- 1/2 cup water
- 5 oz chicken breast
- 1 tsp olive oil
- 1 tsp lemon juice
- 1/2 tsp salt
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 cup spinach or arugula
- 5 cherry tomatoes, sliced in half
- 1/2 of a cucumber, sliced
- 2 tbsp pickled red onions
Yogurt Dill Dressing
- 1/4 cup plain greek yogurt
- 1 tbsp lemon juice
- 1/2 tbsp water
- 1/4 tsp garlic powder
- 1/2 tsp dried dill
- pinch of salt to taste
Instructions
- Add rice and water to a saucepan, cover with a lid, and bring to a boil. Once it is boiling, turn heat down to low and simmer until the water is absorbed.
- Place chicken in a bowl and add olive oil, lemon juice, salt, garlic powder and dried parsley. Toss to evenly coat.
- Heat a skillet over medium heat, and cook the chicken for 7-8 minutes each side until cooked through. If you have an air fryer, air fry at 375F for 7 minutes each side.
- In a bowl, combine all of the ingredients for the yogurt dill dressing and mix well.
- To a bowl or container with a lid add brown rice, arugula, sliced chicken, cherry tomatoes, cucumber and pickled red onion.
- Store in the fridge for up to three days. Before eating, top with the yogurt dill dressing and enjoy!
