
This is one of my favorite dinners to make when I want something quick and easy! This Roasted Sweet Potato Salad has become a staple dinner for me because it is simple to make but has so much flavor.
I love how this salad is fresh and light, but is also filling because it is filled with fiber, protein and healthy fats. The sweet potato and apple both contain a lot of fiber, which keeps you satisfied and gives you energy. The chicken adds a serving of protein, and you get healthy fats from the olive oil, walnuts and crumbled goat cheese.
Also, if you prep the chicken and roasted sweet potato ahead of time, this salad is also perfect for lunch! Just slice the apple and red onion, add to a bowl with a big handful of spinach, and top with precooked chicken, sweet potatoes, cranberries, walnuts and goat cheese.

Roasted Sweet Potato Salad
Ingredients
Roasted Sweet Potatoes
- 2 medium sweet potatoes
- olive oil spray
- 1/2 tsp salt
Roasted Chicken
- 1 chicken breast
- 1 tsp olive oil
- 1 tsp lemon juice
- 1/2 tsp salt
- 1 tsp garlic powder
- 1 tsp dried parsley
Salad
- 4 cups spinach
- 1 apple sliced
- 1/2 of a red onion sliced
- 2 tbsp walnuts chopped
- 2 tbsp dried cranberries
- 2 tbsp crumbled goat cheese
Maple Dijon Vinaigrette
- 1 tbsp olive oil
- 4 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 1 tbsp maple syrup
- 1 tsp minced garlic
- salt and pepper to taste
Instructions
Make the sweet potatoes
- Wash sweet potatoes and slice into 1/2 inch cubes, then add to an air fryer and spray with olive oil and sprinkle with salt.
- Air fry at 375F for 20-25 minutes until golden brown on the outside and soft on the inside.
Make the chicken
- Butterfly chicken breast by slicing lengthwise. Place in a bowl and add olive oil, lemon juice, salt, garlic powder and dried parsley. Toss evenly to coat.
- Heat a skillet or grill over medium heat and cook for 7-8 minutes per side until cooked through. If you have an air fryer, air fry at 375F for 7 minutes per side.
Assemble the salad
- Whisk together all ingredients for the maple dijon vinaigrette.
- Add spinach, roasted sweet potato, diced chicken breast, sliced apple and sliced red onion to a salad bowl or plate. Top with chopped walnuts, dried cranberries and crumbled goat cheese. Drizzle the vinaigrette over the top, and enjoy!
