I made these for lunch recently and LOVED them!
They are so quick and easy to make, and you can use up any leftover veggies that are in your fridge. I like to prep chicken ahead of time so that I always have a source of protein on hand.
For these wraps I used:
- romaine lettuce
- carrot
- red onion
- green onion
- chicken
- homemade peanut sauce
The best part about these lettuce wraps is that you can add whatever fillings and toppings you would like! You could also switch up the protein and use shrimp, ground beef, or even tofu for a plant-based alternative.
I didn’t have any cooked rice on hand when I made these, and didn’t have enough time to cook fresh rice but you could also add a base of rice to the lettuce wraps to make them more filling!


Thai Chicken & Veggie Lettuce Wraps
Ingredients
For the wraps
- romaine lettuce
- your choice of veggies (carrots, bell pepper, cucumber, onion etc.)
- your choice of protein
For the peanut dressing
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp minced garlic
- 1 tsp minced ginger
- sriracha or hot sauce to taste
- 1 tbsp honey
- 1 tbsp peanut butter
Instructions
- Peel the leaves off of the romaine, wash and pat dry. Fill lettuce wraps with your choice of fillings.
- Mix all dressing ingredients together until well combined (you can also blend it). Pour over your lettuce wraps and enjoy!
